Chicken Tom Yam (Sihat)

Ingredients:
600 g (5 pcs) chicken drumstick, discard skin and fat
100 g, (2) stalks celery, sliced
100 g (2) cauliflowers, cut into small pieces
4 red tomatoes, quartered
100 g (1) carrot, julienned
3 limau purut leaves
5 limes, extract juice
1 big onions, cut lengthwise
600 ml (3 cups) water
1 tsp salt
3 stalks lemon grass + 3 cm galangal + 5 bird's eye chillies, crushed
2 red tomatoes, 1 big onion, 5 red chillies (seeded), 200 ml (1 cup) water, blended

1. Boil chicken with 3 cups water.
2. Add in lemon grass, galangal, bird's eye chillies, onion and red chillies.
3. When boiled, add carrot, cauliflower and celery.
4. Stir in lime juice.
5. Lastly, add tomato, limau purut leaves and salt. Serve hot.
