Fried Spinach

Ingredients:
Spinach
Anchovies
Garlic
Salt to taste

1. Saute garlic and anchovies until anchovies almost crispy.
2. Add in spinach, adding water if necessary.
3. Add salt to taste.

Variation: Spinach can be replaced by cucumber, adding more water and light soy sauce, and cooking longer until cucumber softens.
