Vegetable Lemak (Sihat)
Ingredients:
100 g (4 cups) cekur manis leaves. Spinach. pumpkin leaves and others are also suitable.
4 tomatoes, quartered
200 ml (1 cup) low fat milk
1 tbsp vegetable oil
200 ml (1 cup) water
1/2 lime, extract juice (according to taste)
salt to taste
Ingredients to saute:
10 g (1 tbsp) vegetable oil
2 pips garlic
1 big onion
3 red chillies, sliced
1 stalk lemon grass, coarsely pounded
1 cm galangal, coarsely pounded
1 tsp turmeric powder
1. Heat oil and saute ingredients until golden brown and fragrant. Lower heat.
2. Add water. Increase heat and bring to boil.
3. Add vegetables. Cover with lid for 10 minutes and allow to cook. Lower the heat and add tomatoes. Mix well.
4. Add low fat milk. Stir well for 2 - 3 minutes. Remove from heat.
5. Add lime juice before serving this dish as part of the main meal.
Original recipe uses coconut milk.
